We used entirely Syrah grapes for this wine, harvesting the blocks between mid-September and early October. The fruit was destemmed and transferred to small lot stainless-steel tanks and one-ton bin fermenters. During fermentation, we utilized pump-overs on the tanks and punch-downs on the bins for intense extraction of color and flavor. Malolactic fermentation was completed to create more complexity and a rounder mouthfeel. All lots were barrel-aged in 225-liter barrels for 15 months in a combination of 59% French, 24% American and 16% Hungarian oak barrels, 30% of which were new. This blend of barrel styles contributed layers of texture to the finished wine.
