At the winery, grapes for our Grenache Rosé wine were destemmed in preparation for fermentation, which occurred at a maximum temperature of 75°F. A small part of the blend went through a brief fermentation, the juice was pressed off and fermentation concluded at a cool 60°F. In 2016, we focused our efforts on maximizing the saignée technique. This gave us the lighter color and the delicate cranberry and strawberry flavors we love in our Rosé wine.
