Winemaking Notes

This oaked Chardonnay was handmade in small lots and represents three of our best vineyard sites. The juice was lightly pressed off and placed in barrels where it was fermented cool for a minimum of 15 days. This Chardonnay is 100% barrel fermented in all French Oak, 25% of which was new. Coopers included Seguin Moreau, Nadalie and Saint Martin. A mix of yeast strains was used for added complexity of aromas. This wine underwent partial malolactic fermentation which adds a slight buttery note while ultimately keeping all aspects in perfect balance. After primary fermentation, this Chardonnay was left on light lees in the barrel to age for nine months. This sur lie approach adds a creaminess and texture to the mouthfeel. 

Tasting Notes


Our Barrel Fermented Aged & Oaked Chardonnay wine begins with aromas of Fuji apple and hints of tropical fruits. On the palate are flavors of pear, apple and a toasty bread character from the oak, with a luscious and inviting finish. This Chardonnay pairs beautifully with creamy seafood Risotto and cedar planked salmon.
