At the winery, the grapes for our Grenache Rosé were destemmed in preparation for fermentation, which occurred at a maximum temperature of 75°F. After a brief fermentation, the juice was pressed off and fermentation concluded at a cool 60°F. This process created the deep ruby color and delicate flavors of strawberry and cherry desired for our Rosé. We also saignéed a portion of this wine and blended it in with a lot that was fermented with in contact with skins.
