Composition showcases the art of blending. We chose to select grapes from multiple vintages to craft a blend with the best flavors of each year. At the winery, the grapes were destemmed and cold soaked for up to 48 hours to capture intense color. Fermentation occurred in 7-ton, open-top stainless steel tanks at a maximum temperature of 90°F. To achieve vibrant color and enhanced flavors, we used delestage, or rack and returns, throughout fermentation. A variety of French and American oak regimes imparted well-integrated oak notes and a full mouthfeel.
Crafted from the most flavorful grapes across multiple vintages, with a majority selected from 2011, Composition is a blend of Cabernet Sauvignon, Merlot and Syrah – a grape that we introduced to Washington State. Rich and medium-bodied, this wine has blackberry aromas and ripe red fruit flavors of cranberry, cherry and plum that are framed by hints of spicy oak.
