Fruitful style with aromas and flavors of blackberry, blueberry and cherry with spicy and toasty oak notes. The darkest of all the red wines because of the thick skins and pigment of the grapes. One of the reasons Syrah is very drinkable when its young is that it is an earlier ripening grape, does not stand up to as much aging as Cabernet and therefore has fewer tannins.

Dry wine. Blackcurrant, cedarwood, blackberry, wild cherry and berry are the aromas prominent in this wine. The gnarled 50 year old vines of Washington’s oldest Cabernet vineyard always produce wines of enormous complexity. This wine ages very well and develops distinct vineyard characteristics.

Columbia Valley Otis Cabernet Sauvignon

Dry wine. This wine is 100% barrel fermented and has undergone maolactic fermentation which helps lower the total acidity. The barrel fermentation will make it darker with higher extract as the fermenting flavors are contained in the small 59 gallon space. This also results in a more caramel flavor and less crisp tropical nuances.

Hand harvested from the Red Willow Vineyard’s steep slopes, this is a full and powerful wine on the palate. The fine aromas of cedar, plums and dark berry fruit mix with a hint of herbs. Ripe tannins balanced by the sweet fruit provide a velvety texture and lengthy finish.

Dry wine. This wine is 100% fermented in new oak. Otis Block 6 is a bigger style Chardonnay with tropical flavors balancing oak and vanilla nuances. Prominent are hazelnut and butterscotch flavors framed by crisp acidity and tasty oak.
